Here is how the Freeze Dry process works.

Step #1: Freeze

The first step is to freeze the food, which can be either fresh or cooked. The freeze dryer will lower the temperature to at least -30°F. It is OK to [pre] freeze the food in a regular freezer before freeze drying, it will cut down on the time for the freeze dryer to finish the freeze cycle. The first step in the candy recipe however warms the candy first to soften it slightly.

Step #2: Dry

After the food completes the freeze cycle, it is gently warmed after drawing a vacuum around the food trays. As the temp rises, the ice turns from a solid crystal to a gas without going through the liquid stage. This is how process will keep the original shape and texture for the most part. The more delicate fruits will require a gentler warming cycle to not hurt the original structure. Things like pineapple and melons fall into this category.

Step #3: Store

Once the food is completely dry, it is sealed in moisture- and oxygen-proof packaging to make sure it remains its freshness and nutrition. To get the maximum storage life from the food an oxygen absorbing packet should be put in with the food so it won't absorb any moisture from the oxygen already inside. Because light will also degrade food, many people prefer mylar bags to glass jars. A mylar bag is made from a very this layer of metal sandwiched by two pieces of plastic, so it provides a light barrier that is also light weight compared to glass jars, and they don't break.

Step #4: Use

When the time comes to eat it, all you need to do is to rehydrate it by adding some water. If you used our logbook app, it will tell you how much water to add to return the food to its original fresh taste, texture, smell and looks. It's simply amazing!
